Healthy Delicious Recipes: Healthier Giblet Gravy

Healthy delicious recipes, as used in this article, is a reference to how tasty food is arranged in a method that is good for you. If you are like me, you like to eat ordinary food but donít want it to be filled with unnecessary fat, calories, and carbohydrates.

In this series of articles, we will look at an easy way to make cornbread, dressing, and gravy. You will learn how to prepare ordinary foods in healthier ways.

Giblet Gravy:

Original Recipe

  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 cup drippings from roasting pan that have been skimmed of fat
  • 1 cup chicken broth
  • salt and freshly ground pepper, to taste
  • 1 tablespoon dry Sherry (not cooking sherry)
  • 1 to 1-1/2 cups turkey giblets (chopped pieces of cooked liver and neck)

Modified Recipe

  • 3 tablespoons margarine
  • 3 tablespoons all-purpose flour
  • 1 cup of extra virgin olive oil
  • 1 cup fat free chicken broth
  • salt and freshly ground pepper, to taste
  • 1 tablespoon dry Sherry (not cooking sherry)
  • 1 to 1-1/2 cups turkey giblets (chopped pieces of cooked liver and neck)

If you have not giblets from making dressing, cook the giblets by submerging the meat in the broth for about 30 minutes. Cover with a cup or so of lightly salted water and simmer it for 30 minutes.
